There is so much to say about this recipe. The batter is filled with super foods. A mashed banana is used as a great vegan tool for replacing an egg. It’s a healthy breakfast, or you can top it with ice cream and chocolate for an incredible dessert!
PB & J Banana Waffle Ice Cream Sandwich

Ingredients*
- 2½ cups almond milk
- 1½ cups wholewheat flour
- 1 tbsp flax meal
- 1 medium banana
- 2 tbsp vegetable oil
- 1 tsp baking powder
- ¼ tsp pink Himalayan salt
Garnish
- Peanut butter
- 2 tbsp strawberry jelly
- 1 sliced banana
- Coconut vegan ice cream (or favorite ice cream of choice)
Method
MASH BANANA: Mash 1 medium banana with a fork.
WHISK WET INGREDIENTS: Whisk together the banana, almond milk, and vegetable oil.
WHISK DRY INGREDIENTS: In a separate bowl, combine whole wheat flour, flax meal, baking powder, salt.
WHISK INGREDIENTS: Pour the wet bowl of ingredients into the dry bowl of ingredients. Whisk together.
COOK FIRST WAFFLE: Pour 185 ml of the batter into your preheated waffle maker and cook for 4-5 minutes depending on your waffle maker's strength.
COOK SECOND WAFFLE: Once the first waffle is done, start cooking another.
GARNISH FIRST WAFFLE: Top the first waffle with peanut butter, jelly, and 1 sliced banana.
ENJOY WITH VEGAN ICE CREAM: Add second waffle and ice cream to make it a dessert!
