We went for brunch and had the all you can eat pancakes( only had one order,lol) with a marionberry Jam, and the breakfast burritos. The pancakes were nice and fluffy and very good. You didn't have a heavy stomach after eating them. The burritos were excellent too. My husband ordered 2 different kinds and I split them and ate the other halves the next day for dinner.

These little cups are pure joy.lol. I get why they are small, incredibly rich but oh sooooo good. I recommend eating with a small spoon ( I used an ice tea spoon) to make it last longer..lol #oddmaninn

Two words: Vegan Chocolate!!! Recently found out about this all vegan chocolate shop in Salem, OR They have some with peanut butter, white chocolate, rice crispies, coffee. All so incredibly creamy. They offer tours and can now be found in stores. We bought one of each!! #oddmaninn

This is a great family run restaurant in McMinnville. We have gone twice and it will now be our only go to Mexican restaurant from now on. These enchiladas are stuffed with sauted veggies and lots of spinach. The green sauce is perfect and the rice is amazing with lots of lemon flavor!! Since becoming vegan I had to incorporate beans into my eating. These beans are so flavorful. Mom and dad cook while their children and employees run the front. They are always so kind. #oddmaninn

After visiting Oregon Donkey Sanctuary NW we ate lunch at Mesa Fresca. They offer Mexican and Peruvian dishes. One of my favorite dishes as a child was Lomo Saltado which is traditionally made with beef, tomatoes, onions and French Fries with a side of rice. Thankfully Mesa Fresca makes a vegan version with Beyond meat! It's so tasty and reminds me of my mama's cooking. #oddmaninn

Using Butler Soy Curls I made enchiladas. Easy to make, pour hot water over the soy curls let them soak for about 1/2 hour, drain well. Saute in oiled pan with Mexican seasonings (cumin, coriander, chili powder, salt)pour a little enchilada sauce. In a casserole dish add a little of enchilada sauce and layer corn tortillas, soy curls, your favorite vegan cheese pour a little enchilada sauce, layer tortillas, sauce, cheese. Bake for 1 hour hour. YUM!! #oddmaninn

What a great find a Grocery Outlet!!!! This little cake was amazing chocolate gooey goodness. Just put in microwave for 30 sevinds and added some mint chocolate chip dairy free ice cream. We don't eat sweets all the time but when we do it's oh so good😋 #oddmaninn

Monday night dinner was lion's mane soft tacos with Violife cheddar cheese shreds. Violife is my favorite cheese! It is always my first choice to buy. I  enjoy the  creamy taste and the way it melts. The slices are always great for grilled cheese sandwiches😋🥰 #oddmaninn
