Homemade "Vegan Berry Cake" 🫐
I baked the cake for the summer party at work.
If someone is interested to bake the cake... ?!

gwenda Vegan Berry Cake

Ingredients:
120 grams sugar
(I used coconut blossom sugar)
85 grams of rapeseed oil or sunflower oil
150 milliliters of almond milk or soy/oat milk
210 grams of wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon grated lemon peel
2 tablespoons freshly squeezed lemon juice
200 grams of berries
(I took blueberries inside the cake, and raspberries on the top of the cake)

Preparation:
1. Grease a small springform pan (20-22 cm) and dust it with flour. Wash the berries and carefully pat dry. Preheat the oven to 175 degrees top and bottom heat.

2. Whisk together sugar, oil and milk well. Mix the flour, baking powder, baking soda, salt and lemon zest together in a second bowl. Stir briefly but vigorously into the wet ingredients together with the lemon juice. If the dough is very tough, add a little more milk.

3. Dust the berries very thinly with 1-2 teaspoons of flour. This means they will sink less later in the dough. Carefully fold about half of the berries into the batter. Pour the dough into the mold and smooth it out.

4. Spread the remaining berries over it and press them in lightly. Bake the cake for around 30-35 minutes.

Do a stick test. The dough should of course be baked through, but definitely not too dry; So it can still be a little moist inside.1 likeReply

The Iced Matcha belonged to my sister and the third cup belonged to a friend who chose a Coffee Americano.

Green Chalkidiki Olives and Kalamon Olives
I liked them both, the brown Kalamon olives are a bit softer then the green ones, but nice were both.
It was my lunch at work (and I also had some flatbread with it).

I mixed them with the snack salamis, fried them together with onions, and ate them with sauerkraut and mashed potatoes.
