This is a quick and yummy meal. We work from home so it’s nice to have a low fuss lunch on hand. To take it to the next level, serve over brown rice and top with cilantro, green onions and sesame seeds.
This is such an amazing dish. You can taste the lemongrass and the soy cake is tender. I always pair it with a side of spring rolls.

I love this way this roast cooks up. For some reason I prefer it same day rather than reheated the next day. The gravy packets are small but yummy.
These grill up nicely. Just be sure you don’t overcook them!
The ranch dressing here is amazing so anytime you can get a dish that includes it, you should! The salad had a nice mix of toppings and the eggplant is wonderful.

These pepperoni slices are a nice substitute for meat based pepperonis. I wouldn’t over populate the top of the pizza but they were yummy, especially once they crisped up.
