#veganuary Sesame noodles with courgette and tofu. This was seriously awesome. It uses tahini, balsamic, and soya. It’s a Meera Sodha recipe with slight modifications. The vermicelli was perfect though you could use thicker noodles as well. Vermicelli is great because you can cook it ahead of time so that you can concentrate on the other elements of the meal and add the noodles at the end. #veganuary
