Organic Italian Artisan Pasta - Cascatelli

This is a newer pasta shape that was developed in the 2010s. It's name means "little waterfalls" which is a great description. They have a thoughtful design that holds sauce in a crevice between the ruffles. They are a bit fragile and didn't hold up too well when mixed with veggies and mushrooms. If you just want to toss with sauce then add the veggies or protein on top, I'm sure they'll hold their shape much better. I really love large pasta shapes, so these were a great find.

this was a fun shape to eat and i enjoyed the texture.

i totally improvised on the sauce but it came out very creamy and was perfect with a little fresh basil. 🌱

last foto shows the only positive point to the havoc they are wreaking on the beach, in the name of restoring it - pelicans are hanging out because there aren't people around to scare them away.
