Butternut Squash Soup

We love Pacific Foods! They made so many good organic vegan soups. Lighter than cans so they come in handy when travelling

When the weather drops here in SoCal, I enjoy to warm up with some soap. This is one of my favorites because it’s tasty, creamy, and satisfying. #veganuary

A decent #lazyvegan #soup, what it lacks in taste and true #butternutsquash creaminess it makes up for in convenience ☺️ I've had it with several different garnishes, but the classic salt and pepper with a few spinach leaves (pictured here) worked the best.

#veganisnotscary, at least until you try to put cashew cheese or nutritional yeast flakes into this. I made that mistake, so that you don't have to 😅

So, husband bought this one, as He went shopping. I would never have bought it. When I read the instructions:
Expeller pressed canola oil, soy base, cane sugar, etc.
Why?
I make butternut squash soup with one or two principal ingredients squash or pumpkin and coconut milk and salt, some agave and some spices maybe. And done.
It’s so easy to cook and so gratifying.

My favorite Butternut squash soup that isn’t homemade. Creamy and hits the spot on a cold day. You can get about 3 good sized bowls out of one box.
