Makes: 9 pop tarts
Ingredients
Dough
2 cups all purpose gluten-free flour
2 tbsp coconut sugar
1/2 tsp salt
1 cup vegan cold butter
2-3 tablespoons cold water
1 tbsp charcoal powder (optional)
Icing
1/4 cup coconut oil (solid but soft at room temperature)
1 tbsp lemon juice
2 tsp vanilla extract
1/2 tsp apple cider vinegar
1 cup powdered sugar
1 tbsp plant milk
1 tsp blue spirulina
1 tsp butterfly pea powder
1 tsp pitaya powder
Method
1. Mix flour, sugar, and salt in a bowl.
2. Work in the cold butter little by little with a fork until coarse.
3. Add coconut cream and cold water and mix with your hands.
4. Roll into a ball and cut in half. Place both pieces of dough in the fridge for 1 hour.
5. Place 1 dough ball over a saran wrap, add a little flour on the top, and roll with a pin into a large rectangle.
6. Cut out a 9x12in rectangle and then divide it into 9 squares.
7. Carefully lift the saran wrap from under the squares. Be careful, this can be tricky. Then, place the square pieces on a parchment paper.
8. Put the 9 pieces into the freezer and repeat the same process with the second half of the dough.
9. Fill your pop tarts with whatever you desire, seal them with the top layer of dough, pressing edges with a fork.
10. Brush with milk, then poke holes in each pop tart with a fork so that the tarts can breathe.
11. Bake at 350F/175C for about 30 minutes.
11. Make the icing by mixing all ingredients in a bowl. Add one color at a time and swirl lightly with a knife and drizzle over the pop tarts like art!
