These tasted okay- definitely a fall themed sugar cookie. You can definitely taste the apple and brown sugar with some fall spices. I used a dairy free margarine and three tablespoons of aquafaba instead an egg. I feel like my substitutions weren't quite right because the cookies are a bit soft and didn't seem to cook quite right. Maybe chilling the dough would have been beneficial. They still turned out edible.
