With this quinoa I like to prepare "Picadillo" is a traditional dish from mexico 🇲🇽 and other hispanic countries. The ingredients are very minced, originally is made with beef meat, potato, carrots, you can add zucchini or peas with tomato sause.
For my vesion of picadillo I swapped the beef meat for lentils and quinoa with potato, carrots and tomato sause. You can eat it with beans, rice, tortillas or tostadas.
This time we ate it with fried beans and avocado slices, really good and filling 😋
