I usually drink almond or oatmilk, and while looking for a whipped coconut cream recipe, I found out that reduced fat is no good for creating that airy texture. I was happy to find a recipe that gave this canned coconut milk a delicious purpose. It added a great richness and flavor to this smoothie — not overwhelming but held its own. Excited to use the rest of it as another smoothie base tomorrow.
