Recipe for vegan banana oat pancakes with chia seed berry jam by Yuliya Mihaylova
There’s nothing quite like waking up to a breakfast of pancakes, and this recipe is chock full of wholesome plant ingredients right down to the chia berry jam (the sugar is optional!).
All you need is 30 minutes and a good blender to take out the elbow grease from the recipe, plus the chia seed jam doesn’t even need any cooking. Instead, we use chia seed’s ability to gel up to form the texture of jam that we know and love.
My favorite combination for this recipe is with peanut butter or vegan hazelnut spread and topped off with banana slices.

Makes 15 pancakes

Ingredients
For the pancakes
190 grams of fine oats
1 tbsp flax seeds
230 ml dairy-free milk of choice (I used oat)
2 super ripe bananas
2-3 tbsp maple or agave syrup
1 tsp vanilla extract
2 tsp baking powder
A pinch of salt
2-3 tbsp. coconut oil for the cooking

For the chia seed jam:
1 small bowl frozen berries (around 250 grams)
1 tbsp lemon juice
2 tbsp chia seeds
if you wish, you can add 2-3 tbsp of coconut sugar or agave syrup
Method
For the pancakes
Put the oats into a blender and blend them until you end up with oat flour.
Add the bananas and all the other ingredients into the blender and blend them together. If the mixture is too runny, you can adjust by adding a bit more oats.
Heat up a large pan on medium heat. Add a little coconut oil and ladle your pancake mixture. I used a small ice cream scoop to make them the same size.
My advice is to not make them too large, so it will be easier for you to flip.
Cook for 2-3 minutes on each side or until they get a nice golden color.
For the chia seed berry jam
It would be best to use frozen berries, as they release more juices when defrosted.
Place the berries in a heat-proof bowl and defrost them for 2-3 minutes in a microwave. When they get soft, mash them with a fork, add the lemon juice, the sugar (if you wish) and stir.
Add the chia seeds, mix again and leave them for ten minutes – the seeds will gel up the mixture.
