Christmas is right around the corner, and this is my go-to recipe for granola that'll get everyone into the holiday spirit. This salty-sweet mix is perfect in a bowl of mylk, scattered over some vegan yoghurt or ice cream, or just by itself. Pack them into little bags and it'll make for great gifts that are sure to please your friends and family, regardless of their dietary requirements.
You might want to double or even triple the recipe. It won't last long...

Ingredients
Dry
- 250 g rolled oats
- 30 g pistachios
- 10 g sliced almonds
- 40 g pumpkin seeds
- 75 g coconut flakes
Wet
- 8 g salt
- 110 g brown sugar
- 1/3 cup olive oil
- 1/3 cup maple syrup
After baking
- 1/2 cup dried cranberries, sliced
Method
Preheat the oven to 160ºC.
Combine all the dry ingredients in a large bowl.
Add all the wet ingredients to a pot and heat, stirring, just until the sugar is dissolved.
Pour the wet mixture over the dry ingredients and mix well.
Spread onto a baking tray and bake for 40 minutes or until the oats are lightly golden, stirring halfway through.
Allow to cool, then mix the cranberries through.

This makes for a delicious snack, but feel free to customize it your way. I've included a couple of my favorite variations below to up your granola game.
Variation A - Spicy Santa
- 1/2 tsp cinnamon powder
- 1/2 tsp clove powder
- 1/4 tsp nutmeg powder
Add all the spices into the dry ingredients in Step 2.
Variation B - Christmas Choco
- 1 tbs cocoa powder
- 30 g dark chocolate buttons
