Review of Yuzu Kosho Tube - Youki by kyu
Yuzu kosho is near the top of my list of #japanese condiments that I wish more people knew about. It’s a #spicy, citrusy paste made of fermented #yuzu peel, chili #peppers (usually green,) and salt. This one has a few additives, but nothing too nasty. I would characterize the flavor as bright, mouthwatering, and piquant — a little goes a long way. It pairs well with rice, grilled vegetables, or anything fatty (cuts through the greasiness;) and the tube format makes it especially convenient to use.
Yuzu kosho is the star of one of my favorite salad dressings. Earlier this year, during my vacation in Oahu, I had the most sublime salad, and I’ve been trying to replicate it ever since. I think this is about 80% of the way there.
In a clean jar, combine…
- 1/2 Tbsp yuzu kosho
- 2 Tbsp rice vinegar
- 2 Tbsp roasted sesame oil
- 2 Tbsp neutral salad oil
- 4 Tbsp soy sauce
- Pinch of granulated sugar
- Pinch of white pepper (optional)
Shake well and serve! I believe this tube was $5.49 or thereabouts at Nijiya — a small price to pay for a ton of amazing flavor.
