This green lentil pasta contains more protein than traditional wheat pasta (20 g in a 3.5 oz serving) and surprisingly also tastes good, it didn't overpower my lasagne at all. I layered seasoned tomato sauce, Explore Cuisine organic green lentil lasagne, homemade tofu ricotta and spinach, and I also threw some vegan basil pesto and store-bought vegan feta on top. Tastes delicious, but I want to draw attention to the texture of the pasta. On the box it says "oven ready" and I was a bit nervous but all of the lower levels of noodles were perfectly al dente while the top layer was chewy (maybe I should have used more sauce instead of pesto?). Great for people who love al dente but I want to give a huge caution to make sure you use lots of sauce so that the noodles cook in the oven without boiling them first.
