I tried a recipe I saw posted on Instagram by @veganlunchtoday. It’s called “Al Pastor Style Cauliflower”. It’s easy and it’s with simple, readily available clean and natural ingredients. The last 2 photos are the recipe.

Instead of chilis, I used Scotch Bonnet peppers. They were considerably cheaper at No Frills than the chili peppers. For whatever reason, I decided to use 5 instead of the recipe’s suggested 4. I wish I had known beforehand how hot these peppers are. According to Wikipedia, “Like the closely related habanero, Scotch bonnets have a heat rating of 100,000–350,000 Scoville units.[4] For comparison, most jalapeño peppers have a heat rating of 2,500 to 8,000 on the Scoville scale..”

Of course, I looked up this information after my mouth was on fire during dinner. But it didn’t matter, the sauce that covered the cauliflower was deliciously intense and flavourful. It’s an impressive dish that’ll make you look like a culinary whiz in the kitchen.

I’ll use the rest of the scotch bonnet peppers in salads and some other dishes, but I’ll be sure to use them sparingly.
