Earth Balance

Earth Balance makes it so easy to veganize recipes, like the one I followed to make these Linzer cookies. #baking with spread from a tub can be pretty unwieldy, so unsalted sticks with measurement markings felt like the answer to my prayers! I wish they didn’t contain palm oil, though. I thought the dough was slightly stickier and less stiff than the dairy butter version of my memory, but all was well with some extra refrigeration time, and the finished cookies came out great: short, with a lovely snap. Earth Balance isn’t the cheapest, but I won’t quibble about it; in my view, for special occasion bakes, the quality entirely justifies the expense!
