 this is raw sesame tahini so after you do open it you do need to refrigerate it I am a tahini fanatic I consider tahini like wine you just want to try some different types and styles and it just makes me feel better after I have tahini it's the stress reliever I guess it's the fat but at least it's a nutritious fat
