To tofu or not to tofu? I love tofu, mostly in Asian style cooking more than as a meat or egg substitute. I became vegetarian in 1986 as a teenager and the restaurant options were pathetic. If you were in a health food type restaurant, they’d probably try to serve you some soft tofu scramble and texturally I couldn’t take the slimy glop trying to be passed off as something it’s not. Fast forward all these years (I’m vegan now ) and I still love tofu in Asian cooking but these super firm tofu products are delicious and versatile. You can change the texture by freezing and defrosting it twice if you want extra chewy bits. I crumble it and coat it in potato starch for this texture pictured and it’s incredibly delicious. I even have a fancy 😂 $12 tofu press to get extra moisture out!

Here I cooked coated, crumbled tofu with some oil, added dark soy, mirin and a vegan umami seasoning and tossed with cooked broccoli to serve over rice. Definitely “to tofu” to answer the original question!! 🙋🏻‍♀️

triciaa Thank you! Yes, freeze In entire package and defrost in fridge. Use after fully defrosted. A lot of people recommend doing the freeze/defrost twice for even more texture but I’ve usually just done it once. It’s really easy and I like that I can get a little extra longevity if it’s close to expiration date—added bonus!1 likeReply
