I recall Carol J Adams (an absolute hero) talking about how vegan critics will go on about vegans recreating burgers that resembled animalised protein, without stopping to think that falafels have been around longer than animal burgers, and that just maybe burgers first resembled falafels..
This burger reminds me of that. falafels in a burger, with a tahini dressing and confit d’oignon, plus Chips on the side.
