These summery pupusas were stuffed with marinated zucchini and luscious melty Violife vegan cheese. The puposa is the national dish of El Salvador and even has a specific day to celebrate it. And no wonder! They are fantastic! A puposa resembles a Mexican quesadilla, but consists of a thick, hand-rolled maize tortilla that contains a filling and is sealed on the sides, whereas a Mexican quesadilla is made by filling a tortilla, folding it in half, and toasting. They were served with curtido, a fresh and tangy Salvadoran slaw, and salsa rojo, a flavorful tomato-based salsa.
