This consisted of savory portobello mushroom steak, crisp and fresh apple-slaw, and lively and flavorful house-made chipotle cashew crema on a blue corn tortilla. It was a creative transformation of a traditional meat-centric Peruvian dish into delicious and healthy plant-based version. #saveveganrestaurants
