Review of Chinkiang Vinegar - Gold Plum by aqualing
Literally translated as Zhenjiang (Chinkiang, the town famous for this) aromatic #vinegar, it’s an aged black vinegar that’s fragrant, bright and slightly sweet. In a way like balsamic vinegars, but made from rice, stronger and less sweet. Also similar to balsamic vinegars, there are levels of aging, resulting in different depths of flavor.
It’s one of the 4 most famous vinegars in China. This brand is probably the most popular in the west. It’s also budget friendly. It can be used on all sorts dishes, but probly best simply as a dipping sauce for dumplings and hotpot (not everyone though, the forever going regional hotpot dipping sauce battle is another story). And I honestly just use it wherever it seems fit.
One caveat is that it’s not completely gluten-free.
