Bought Green Banana Flour at Woolworths because we were super curious and felt like being healthy. It had a starchy, grainy feel, and actually worked SO WELL in these banana muffins that you couldn't tell something unusual was up. Best of all we felt AMAZING after eating the entire stash, because they're so high in fibre + micronutrient dense.
We LOVE that the Watkins family who makes this are pioneers in Aussie green banana flour - they're helping keep otherwise perfect bananas out of landfill, which are usually discarded simply because of oversupply.
