Mooncakes with white lotus seed paste (白莲) fillings are more expensive than normal lotus paste (莲蓉) due to the extra work required to remove the layer of membrane that clings closely to the seed (similar to chickpeas). But the resulting paste has a much smoother and creamier consistency, is lighter in color and also less sweet.
