Review of Charcoal Panini - Pick n Pay by shaunthevegan

WHAT'S YOUR EASY DINNER FAVE?

The work week can get quite hectic at times, and setting time aside to prepare dinner can be such a las (an effort), but root veggies, bread and hummus always seems to PULL THROUGH! 💁‍♀️

Last night, I took out 1/2 a butternut and a sweet potato and sliced it into discs and baked it in the oven for 30-40 minutes in a tray drizzled with some olive oil. I kept the skin on because...I'm lazy, but there are nutrients in veggie skins, so why take it away from your meal?...*me making myself feel better for being lazy🤣🤷🏻‍♂️

While that was baking, I took a walk to Pick N Pay to buy some bread and hummus. I ended up buying two charcoal paninis and their house-brand hummus. I got back home, I checked on the butternut and sweet potato, and gave it a turn so it could brown nicely on the other side.

While that was baking further, I sliced up an onion, fried it in some olive oil, cooked it for about 5 minutes, added 2 cloves of garlic and deglazed the pan with some water to help the onions in becoming golden brown. I then added some tamari to add extra flavor.

After about 40 minutes, the butternut was soft and the sweet potato was beautifully browned. While the root veggies were cooling down, I halved the panini and put it in the oven for 5 minutes to crisp it up a bit. I took it out, spread some Flora vegan butter and a GENEROUS amount of hummus...I REPEAT, A GENEROUS amount...did I say GENEROUS already?

I then topped it with the onion, garlic and tamari mixture, and chopped up salad greens that I got from my friend's lovely veggie garden and added some butternut and sweet potato discs on the side. There we go, Bob's your uncle and Susan's your aunty 🤗

I've got a serving left for lunch today, so I cannot wait for lunchtime lol!

Life's always nicer with hummus...and bread...and any form of potato🙅‍♀️
