Review of lupini in salamoia - Olive alferino by walkabout-veg
Vintage legumes which occasionally can still be found at markets and small shops in Italy and Spain. These goodies are very rich in protein and low in carbohidrates. However, they do contain a lot of salt so soaking and rinsing them helps to get rid of excessive salt. They are a lovely ingredient to make cheese, mayonnaise or just a nice pasta sauce mixed with soymilk, nooch, and some black pepper.
