I just read spinach "belongs to the amaranth family and is related to beets and quinoa." Trivia for your amigos.
Contains the ACES antioxidants (vitamins a c e, selenium) which are legally the only nutrients non medical professionals working in nutrition can say are antioxidants... Even though we all know thats shortsighted. Also rich in k1, b9, trace minerals, quercetin and many other phyto compounds.
"Spinach is high in both calcium and oxalates, so people who are at a high risk of developing kidney stones should limit their intake." Not just people at high risk, it's risky anyway. I know someone who recently passed stones partly because he was consistently eating especially mineral rich plants like spinach raw. Paid the price in more ways than one. All plants contain antinutrients that inhibit absorption. I've really been beating that drum on here, hoping at least one of you listen to the advice. Not just for deficiencies. This guy said it was the most excruciating pain he's ever experienced, thats before he got to the hospital for anesthesia and surgery.
