Review of Hard Tofu - Evergreen 常綠 by kmurph1
This is my most frequently purchased tofu. It’s a huge block, so it feels like a good value! I always freeze, thaw & press tofu prior to marinating & cooking; this removes moisture to make it more meaty, and also helps it to absorb more of your marinade.
It’s quite firm - probably one of the firmest available in Australia (my area at least), so equivalent to “extra firm” or “high protein” varieties mentioned in recipes based overseas.
