This recipe triples up the level of your normal vegan cheesecake. Layer up some berries, vanilla, and nuts to make this sophisticated, raw dessert! And believe me, these flavors go so well together that it's well worth the wait to freeze each layer!
Triple Berry Cheesecake

Ingredients
For the crust
- 1 cup almonds
- 1/2 cup walnuts
- 1/3 cup shredded coconut
- 50g coconut palm sugar (you can use cane, brown sugar, date sugar, etc)
- 8 medjool dates (take out the pits)
- 2 tbs raw cacao powder (doesn’t have to be raw)
- 1/4 teaspoon sea salt
For the triple berry layer
- 1 cup cashews (soak for a few hours)
- 1 cup blueberries
- 1/2 cup coconut palm sugar (you can use cane, brown sugar, date sugar, etc)
- 200g canned coconut milk (not chilled)
- 1 tsp arrowroot powder (or agar, corn starch, etc)
For the vanilla layer
- 1.5 cups raw cashews (soak for a few hours)
- 1/2 cup coconut palm sugar (you can use cane, brown sugar, date sugar, etc)
- 60g fresh squeezed lemon juice
- 1/3 cup melted coconut oil unrefined
- 1/2 tsp vanilla powder (or 1 vanilla bean)
- 1 tsp arrowroot powder (or agar powder, corn starch, etc)
Directions
- Start with crust first. Blend the nuts in your food processor coarsely then dump the rest of the ingredients in and blend. When you press with your fingertips it should stick together.
- Use your hands and press the crust into a spring form pan and shape it firmly.
- Put as many fresh berries as you want on top of the crust in bottom of cake / spring form pan for an extra layer.
- Combine all the ingredients together in your blender
- If consistency isn’t thick, pour berry mix into a sauce pan and heat up on low until it thickens up.
- Pour the berry mixture on top of your crust & fresh berries in the cake / spring form pan.
- Put the cake pan into the freezer until the layer hardens up a bit.
- Take the pan out of the freezer and mix up the vanilla layer ingredients in a blender until smooth.
- Pour the vanilla layer on top of the hardened berries layer and put back into the freezer for a few hours.
- Take it out then garnish however you like and grab some utensils & enjoy.
