#### MIT is the perfect campus to find a variety of delicious plant-based options everyday! We have five dining hall dorms alongside multiple cafeterias and snack shops on campus. The menus for all of these places can be skimmed via [https://mit.cafebonappetit.com](https://mit.cafebonappetit.com) AND you can even filter specifically for vegan, vegetarian, gluten free, and halal only food. This ultra-convenient website allows you to check all the plant-based options on MIT campus within minutes for not just that day, but the future week as well. And if there’s a dish you absolutely loved that you want to recommend to a friend but you forgot what it was called, fear not, for you can see the past week’s dishes as well. Ready for the most amazing part? All of MIT’s dining halls and cafeterias label each dish with stickers detailing if they are vegan or vegetarian, so no more having to read ingredient lists or ask staff members what’s in a dish - you can just look at the stickers. Checking out all the plant-based items has never been easier! In addition to dining halls and cafeterias, MIT also hosts two grocery stores on campus, both of which are full of vegan options. #### [Rice University](http://www.rice.edu/) is a research university located in Houston, Texas, near the Texas Medical Center and the Museum District. With only about 4,000 undergraduates and 3,000 post-graduates, Rice is a relatively small school focused on undergraduate teaching. Before matriculation, each undergraduate is randomly assigned to one of eleven residential colleges, a system similar to college programs at Oxford, Cambridge, Yale, or even Harry Potter’s houses. Each college has its own culture and dorms. Among the colleges, six serveries or dining halls (South, Sid Richardson, Seibel, Baker, West and North) provide food for students. The servery food, which is planned, cooked, and served by culinary professionals, has received high rankings by USA Today and the Princeton Review. Not surprising, considering that 90% of the food is cooked from scratch. Additionally, the chefs are committed to using local produce, with 25% of ingredients coming from vendors within a 200-mile radius, which includes Rice’s own weekly [Farmers’ Market.](http://www.magazine.rice.edu/2017/07/rices-food-revolution) 

#### Given Rice’s increasing focus on a plant-based diet (termed [My Plant-Based Journey](http://dining.rice.edu/our-plant-based-journey/)), eating as a vegan, vegetarian, or omnivore who wants to eat more plants is feasible and exciting. With creative plant-based dishes like cardamom-creamed spinach, muffins, pizza, and chocolate beet-cupcakes, students are well-fed and rarely disappointed. Daily options always include a salad bar with quinoa, boiled eggs, nuts, seeds, and all types of vegetables. Fruit and yogurt are also almost always available. Hot items rotate daily.

#### Hello! And welcome to the UC Davis Ultimate Vegan Guide. Davis, home of the Aggies, is located in Yolo County neighboring with the Bay Area, Lake Tahoe, and Sacramento. Here you will find a charming college town with a Northern California vibe filled with bicycles (22,000 bicycles can be found on campus every day!!), grassy fields and beautiful trees, happy people, and most importantly, delicious veggie food! 


#### UC Davis prides itself in its commitment to sustainability. The campus hopes to achieve net zero greenhouse gas emissions. And so, you can feel a campus culture centered around healthy and environmentally conscious living. It is easy to be vegan, vegetarian, plant based, and health conscious in this community. You will find a multitude of clubs and organizations focused on animal rights, sustainability, environmental justice, food justice, and way more. One of the most treasured activities in Davis is the Farmer’s Market — families and students flock to downtown to try all of the healthy, local produce and to share a meal on the grassy field while listening to the live bands.

#### We are Athena, Isa, and Chelsea, three vegan yoga teaching babes excited to show you the way to plant based and healthy living in Davis. Athena is a graduate from UC Davis with a degree in Nutrition. Since she has graduated, she’s been traveling the world — teaching yoga and seeking out the best vegan spots worldwide! Most recently, Athena lived with Isa in Thailand where they made the Vegan Guide to Bangkok. Isa is in her last year at UC Davis majoring in American Studies and Education. She hopes to move to Bali with Athena in the summer! Chelsea is a fourth year international agricultural development major with a strong interest in regenerative agriculture. She hopes to use this knowledge to work with small scale women farmers around the world by promoting soil health education to ultimately improve women’s and gender equality and economic opportunity. All three of us teach for the Yoga Club on Campus, and we love to geek out over vegetables… and vegan donuts!
