When baking I always prefer to use the finely shredded coconut in recipes, like these toasted coconut blondies, because they're not quite as dense and chewy as the bigger flakes. I also always toast the coconut first before adding it to the recipe because it really adds such a wonderful flavor.

I really like this Whole Foods brand because, not only are they organic and fair trade, they're very reasonably priced that only $3.49 a bag.🥥
