mikejuliette What is actually really good too is making vegan egg mayo using butter beans. All you need is a pinch of Indian salt, 1/4 teaspoon turmeric and 1.5 tablespoons of vegan mayo to a can of roughly mashed drained butter beans... really quick to make and the texture reminds of the hard boiled egg yolk...1 likeReply
