We’re in lockdown again so I can’t go to the store for my produce and groceries. Online grocery shopping is a life saver, but obviously I can’t pick out fresh produce myself. I got my organic locally harvested greens delivered and missing some salad toppings. I still have nuts in my pantry, so I bought shelled edamame from Healthy Options’ online store. Good source of protein. Since this is a frozen product, you can microwave, steam, or cooked on stovetop before consuming. Adds crunch to my salad.

I bought this shelled edamame from Woodstock at my local Wegmans. I bought it to make some meal prepped summer roll salads https://thatveganbabe.com/summer-roll-bowl-meal-prep-high-protein-vegan/. All you have to do is boil water, put your edamame in and boil for 5 to 7 minutes. I love that they are high protein and fiber. #edamame #mealprep
