Vegan Refried Beans

Love Rosarita products when we’re enjoying Mexican food. Several of their refried beans are vegan, with a variety of flavors and seasonings. The green chili and lime are vegan and fat free, very tasty. I especially love them in soft whole wheat flour tortillas, with meatless crumbles, lettuce, tomato. onion, and salsa. The combinations are endless! Also enjoy them in our vegan version of Huevos rancheros, with Just Egg, salsa, and sliced avocado. Makes a great brunch!

Beeeeeeans! They sell these at Costco for ~.99 a can. We had some tortillas left over from a recent Mexico trip so we loaded em up. Cauliflower, jalapeño, guac, salsa, greens and BEEEEANS. If you don’t like bean tacos then eff you 😏
