Who says homemade potato chips have to be difficult? Did you know you can make them in just a few minutes in the microwave? That's right, the microwave! These chips are like magic. They turn out super crispy and taste much healthier than bagged chips. They are a great snack for both kids and adults, and are even a great side dish for parties.
These can be made with many different types of potato, including rustic brown and sweet potato, but I've found that gold potatoes work best. Try this easy potato chip recipe the next time you have a few extra potatoes lying around!
Ingredients
1 gold potato
1 tbsp of light olive oil
A few sprinkles of sea salt
Method
Slice the potato by using a mandolin on the thinnest setting. If you do not have a mandolin, carefully slice them using a knife as thinly as possible. It’s okay if not every piece is the same size.
In a bowl, evenly coat the slices of potato in the oil oil. Add a sprinkle of salt.
Place the potato slices on a microwave safe plate. Make sure the pieces are not touching.
Microwave on high for 2 minutes, then flip them over.
Microwave for another 4-6 minutes until they turn slightly brown and dry. Check them frequently to make sure they don’t burn.
Take the chips off the plate and lay on a drying rack for 5 minutes.
Sprinkle with more salt if needed and enjoy immediately!
