I love both green and purple cabbage for the cool crisp texture they add to dishes. But purple cabbage is so striking and adds so much color! Plus purple cabbage has more nutrients than the green variety.
For this rainbow slaw, I used both varieties of cabbage plus other colorful veggies like red onions, carrots, cilantro, as well as some green onions.
