this plating is inspired by the garlic cucumber dish they serve at Chengdu https://app.abillion.com/reviews/633bc1f6747dd820c246b1fd Now since I can’t always afford to have my partner in Singapore full-time, the least I can do is bring the bits of Singapore I enjoy to her. Usually that translates to vegan products you can’t find in Kuching but sometimes it also means producing a rendition of a dish I think we’d both enjoy 😋 The oily “glaze” atop the cucumber here is made with 2 parts vegetable oil, 2 parts #chillioil, and 1 part #sesameoil with lightly fried bits of #seaweed and #garlic in it 🧄 I would’ve topped it with sesame seeds and chilli flakes but the latter was all we had since this was a pretty spontaneous creation! Most of my #veganrecipes come that way anyways 🫣 The oil here brought it together though! It’s not the most #spicy of #chilli oils out there but had it packed any more heat, I’m sure @m1tch9i wouldn’t have been able to handle it anyways 🫢 Sitting below the layer of oil is a thick layer of salty, greasy, gunk 🛢️ I’ve actually used it before on its own as a noodle seasoning cause it’s such a burst of #umami! Yeah, I’m sure my doctor loves me 😂 It’s been a long time since I’ve last said it, but this is one of those #pantrygoodies you’ve just got to have!
