Baking shortbread is a family tradition - my Mom was Scottish and every Christmas I grew up with the ritual and the finished product - yum! Unfortunately, traditional shortbread requires a LOT of dairy butter. I haven’t made it in a few years because the vegan butters just weren’t working for me. We tend not to use too many butter alternatives but this one is great for special occasion baking. Works in every traditional recipe we’ve tried.
