Mint Chocolate Cookie

I love that this is not too creamy and the balance of mint to choc

chip cookie ratio is just right! Also dangerous if you’re a sucker for ice cream because this can disappear in one sitting if you’re not careful 🙊 Thankfully my son kept me in check with his “don’t-you-dare-finish-it-all” stare 🐱

Ben & Jerry’s makes the best vegan ice cream for my taste buds. I have

others that I like but B&J go above and beyond with creamy ice cream base and globs of goodies. I really like texture in my ice cream so that is a huge plus for me. The flavors POP! This mint is no exception. You will find some huge cookie pieces in there too. They’re kind of like an Oreo but with a softer texture, no crunch. Did I mention it’s delicious?!! It is BUT the calorie content is soooo high even for a dessert. I feel like if those cookies were just a bit smaller maybe we could dial that down a notch. 😅 As an occasional sweet treat, it’s a ‘worth it’ for me!

So glad to have the classic chocolate mint flavor ice cream in vegan! I like

the fact that the mint is not too overpowering, while striking a nice balance with the chocolate and sweetness of the ice cream. Generous chunks of chocolate cookies as well, which added so much to the texture.
