My vegan Lasagna with mushroom bolognese sauce.
This lasagne is super easy to do.
Use vegetables of free choice, I usually use zucchini and eggplant in slices.
The mushroom bolognese sauce: Tomato sauce (garlic, onion, tomatoes pan roasted, mix in a blender with spice of choice) stir fry in a pan: chopped onion, ground mushrooms and carrots and add the tomato sauce.
Now build the lasagna, layer by layer, pasta, veggies, sauce, veg cheese and repeat. Bake at 180ºC for 30’-35’. I love it and my family and friends too 🙂
