*VEGAN IMMUNITY BOOSTER SOUP*
I live in the Northern Hemisphere. This year, winter hasn’t even started but the colds and sniffles already have. I did a soup experiment with fresh veggies that I had in my fridge. It turned out so well that going forward this will be one of my perfect, antioxidant rich, immunity booster soups for freezing winter days.
Ingredients:
Sesame oil or EVOO
Boiled fresh sweet corn from 2 cobs of corn
2 Steamed carrots
1 cup of steamed string beans
1 cup of sautéed shiitake or any mushroom
1 medium hot green chilli (optional)
1 cup of scallions
1 tbsp minced garlic
1 small chopped onion
1 tbsp fresh ginger paste
1 tbsp Hakka noodles seasoning
1 tbsp soy sauce
1 tsp white table vinegar
1 cup veggie broth
6-7 cups water
Vegetable Hakka noodles - 1/2 cup
Salt to taste
Method:
1) Mince the boiled and steamed veggies together - sweet corn, carrots, beans, mushroom, scallions., green chilli
2) Heat the oil in a sauce pot. Add minced garlic and chopped onion and sauté until onion turns translucent.
3) Add Hakka noodles seasoning mix.
4) Add the minced veggies and ginger paste, and sauté for 3-4 minutes. Add salt.
5) Add veggie broth and water.
6) Let it simmer on medium flame for 25-30 minutes.
7) Add soy sauce, vinegar, and Hakka noodles. If soup looks too thick add sone more water. Let it simmer for 4-5 more minutes.
8) Switch off the flame and serve steaming hot with chopped scallions garnished on top. Feel free to add some sriracha or hot sauce for a spicier soup.
