I like to share here how you can make your soups so flavorful it’s like a secret. Only need some extra effort to achieve .
Since NY is getting cold . We love to add soups at dinner time . As we are on journey of healthy eating life style I make my vegetables stock @ home . I would make every other week . Big 5-6 quarts pot . And store in one quart size containers in freezer .
I start with little oil to pop back pepper pods red chili’s and bay leafs . In my electric hot pot I keep water boiling . After spice pops I add 2-3 cloves crush garlic and 1 big onion chopped and fry until onion carmalize . add cauliflower cabbage celery and carrot . You can add stems of your herbs like parsley 🌿 coriander or dill . You can use onion peels outer skin we throw away in freezer save higher peels . Add to stock . It brings out flavors . Depans on your personal choice . I usually keep all outer stems leafs of cauliflower and cabbage with core for my stock . You can save it in freezer. 😘
Add 5 quart boiling water and simmer for two hours . ( not boiling though ) I add more water as it reduse . In two hour put off heat let cool . Get out big chucks of cauliflower and carrots only in another pot and rest strain in another pot .
Crush carrots and cauliflower and mix to liquid. Store . When you make any soup add 2-3 cups this gold water and enjoy best instance flavors of your creations best soups . 🥰🙏
