Recipe: COTTAGE PIE with SWEET POTATO MASH (serves 4)

INGREDIENTS:
🌱 1kg sweet potatoes (washed and chopped)
🌱 1/2 tsp onion powder
🌱 black pepper
🌱 1 red onion (finely chopped)
🌱 1-2 carrots (chopped)
🌱 2 garlic cloves (minced)
🌱 1 1/2 cups frozen corn
🌱 1 cup frozen green peas
🌱 1 tin butter beans (drained and rinsed)
🌱 2 tins lentils (drained and rinsed)
🌱 1 tsp veggie stock
🌱 230g mushrooms (washed)
🌱 3 tbsp nutritional yeast
🌱 2 tbsp tomato paste
🌱 1 tbsp white miso paste
🌱 1/2 tsp dried thyme
METHOD:
1. Boil or steam the sweet potatoes until tender, then drain and return to the pot, stirring in the onion powder and black pepper and mash until smooth. Set aside.
2. Preheat the oven to 200ºC.
3. In another pot, cook the onion and carrot and cook until softened (5 min) and then add the garlic. Stir in the corn, peas, and tin of butter beans. Cook until the vegetables are tender and add hot water if needed to prevent sticking. Stir in the lentils, then transfer the mixture to a baking dish and set aside.
4. In the same pot you used before, add the mushrooms, nutritional yeast, tomato paste, miso paste, and thyme to one cup of water with the veggie stock and cook (5 min). Transfer the mushroom gravy mixture to a blender and blend until smooth. If the gravy is too thick, mix in up to 1/2 cup of additional veggie stock.
5. Pour the gravy over the vegetable mixture, stirring to combine. Spread the mashed sweet potatoes on top, smoothing to cover the surface. Bake for about 30 minutes.
