Such a good croissant wow!! It’s truly challenging to make an excellent vegan croissant because vegan butters don’t always have the same functionality as dairy butter. I’m sure developing this recipe took a lot of trial and error, but they nailed it! Super indulgent, buttery and flaky and just the right sweetness. A lovely almond paste inside too. This little cafe is owned and run by a super friendly and sweet couple, and almost everything they make is vegan! In fact, one of the owners is vegan herself :) Highly recommend stopping by Foxy’s if you get the chance
