I saw these vanilla ice cream sandwiches made with #[almondmilk](hashtag-5b91c99f33a3a9efa9a4a2b7) and another version made with coconut milk. Decided to try this one since I don't love an obvious coconut flavor to my food. These are cute little sandwiches, the ice cream still contains #[coconutoil](hashtag-5ebc3054894f274879a543dd), so it did have a slight coconut taste. The #[vanilla](hashtag-5b61361bc215c949ed60ceb2) really came through. The cookie part of the sandwich was nice and soft, I just wish it was a little thicker.
