Review of Stir-fried Rice with Hedgehog Mushroom & Pineapple at Loving Nature by anna-c

I really like this fried rice! The texture of the fried hedgehog mushroom reminds me of the scallop in dried scallop fried rice. It's not soft and spongy like most mushrooms.

The dish has loads of bell peppers, pineapple, corn and cashews. I also like the texture of the fried rice, chewy and not clumped together without being oily.
