elej91 nah, sodium bicarbonate is just a pH regulator in this case (I'm a food tech in this industry). Canned drinks like these go through a retort (pressure cooker) to pasteurise them. If your pH is too low, the proteins tend to be more heat sensitive and can come out of the solution.2 likesReply
