Macadamia Nut Toasts

Not only are these toast slices a pretty appetizer, macadamia nuts are packed full of protein and make a creamy, buttery cheese spread! Use just a touch of coconut sugar in your glaze and a combination of apple cider vinegar and lemon for a bright, surprising burst of flavor.

Pink Macadamia Nut Cheese Toasts w/Balsamic Reduction

Serves: 2-3
Active time: 30 min

Ingredients:

  • 1 cup soaked raw macadamia nuts, drained and rinsed
  • 1.5 tbsp nutritional yeast
  • 2 tsp apple cider vinegar
  • 1.5 tsp fresh lemon juice
  • 2 tsp white mellow miso paste
  • 2 small cloves garlic
  • 8-10 tbsp water
  • 1/4 tsp salt colored with 1/2 melted packet of frozen pitaya

Glaze ingredients:

  • 1/2 cup balsamic vinegar
  • 1 tbsp coconut sugar
  • 1/2 tsp salt

Directions:

1) Add cheese ingredients to a food processor and mix.

2) To make balsamic reduction, add everything to a pot and bring to a boil. Reduce heat and remove around 15 minutes until it thickens.

3) Serve with fresh or frozen berries.
