Tai Hing Dried Shitake Mushroom

The fact that it is sliced is already a win for me (I hate this part of meal prep). Rehydrate for 5 minutes before adding to your dish. Shitake mushrooms are known for their immune boosting, cholesterol lowering, and cancer-fighting effect and great meat alternative. I enjoy munching on it for its earthy, rich flavor. I used them for stir-fry and soups.
For this dish, I sautéed the rehydrated mushrooms with garlic and onion, poured in my sauce (miren, soy sauce, maple syrup, salt, pepper, vegan butter), then added the miracle noodles (check out my separate review on this). Simple and delicious!
